Grape Varieties: Blend of Syrah (60%) Tempranillo (20%) and Grenache (20%)
Grape Harvesting: Grapes are manually harvested during the night in order to preserve the aromatic profile of the different varieties.
Production: Grapes received are destemmed and seeds removed to avoid off flavors during fermentation. Grapes are crushed and fermentation is done under controlled temperature at 12°C with selected yeasts, with skin and pulp in order to extract not only color but also the aromas of each variety. Battonage is done every 3 hours during the whole period of fermentation (approximately 25 days). The carbon dioxide generated during the fermentation helps the color to be extracted from the skin.
Tasting notes: This wine is a blend and the concept of the blend is to select the best varieties each year that works together in perfect harmony. In this case, the Syrah gives a spicy nose that is balanced with the red fruits and likeness of the Tempranillo and Grenache.Color: Intense ruby red with violet notes. Clean and brilliant red tones.Nose: This wine has spicy notes of black and green pepper mixed with red fruits and well mature red fruits. Intense aromas with a touch of sweet aromas coming from the Tempranillo.Mouth: When tasting the wine, you can first appreciate the black pepper notes from the Syrah, followed by some silky taste that is given by the Tempranillo with red fruits and finally sampling the final balance of this wine.

Food pairing: This wine can be tasted at any time of the day and is perfect for Spanish Tapas. Good pairing with light meals, pasta, and rice dishes as well as meat and seafood on the grill. Perfect for salad and fresh cheese.
